Artisanal Pasta Maker- [Weekends Off]
The Italian Apron is seeking a Full-Time Artisanal Pasta Maker to join our culinary team to support our NEW marketplace La Cucina in Maryville, Tennessee. As an Artisanal Pasta Maker, you will play a crucial role in assisting the Artisanal Manager in the production of our Pasta Fresca [Fresh Pasta]. This position involves various kitchen tasks, including workstation preparation, ingredient and filling preparation, and operating pasta extruding equipment to craft a variety of pasta shapes. You will also contribute to the creation of handcrafted pasta such as Ravioli, Agnolotti, and Ricotta Gnocchi. You will work closely with the Artisanal Manager to ensure the quality and consistency of our artisanal pasta products.
- Workstation Preparation: Set up and organize workstations, ensuring all necessary tools and ingredients are readily available.
- Ingredient and Filling Preparation: Measure, mix, and prepare ingredients, including dough, sauces, and fillings, according to established recipes and guidelines.
- Pasta Extrusion: Operate pasta extruding equipment to produce a variety of pasta shapes, including Fettuccine, Bucatini, Campanelle, and Torchietti.
- Handcrafted Pasta Production: Assist in the creation of handcrafted pasta dishes such as Ravioli, Agnolotti, and Ricotta Gnocchi, following traditional recipes and techniques.
- Quality Control: Ensure the quality, consistency, and appearance of all pasta products, adhering to our high standards.
- Maintain Cleanliness: Keep work areas, equipment, and utensils clean and sanitized to meet food safety standards.
- Assist Artisanal Manager: Collaborate closely with the Artisanal Manager to coordinate pasta production schedules, troubleshoot issues, and implement improvements in pasta-making processes.
- Inventory Management: Monitor and report ingredient and equipment inventory levels, assisting in restocking as needed.
- Compliance: Adhere to all food safety and sanitation regulations and follow company policies and procedures.
- Team Collaboration: Work as part of a team to ensure efficient kitchen operations and a positive working environment.
- Previous experience in pasta making or a culinary environment is preferred.
- Knowledge of pasta production equipment and techniques is an advantage.
- Strong attention to detail and a passion for crafting high-quality pasta.
- Ability to follow recipes and instructions accurately.
- Excellent time management skills and the ability to work in a fast-paced kitchen environment.
- Food handler's permit or certification is a plus.
- Strong communication skills and the ability to work collaboratively with colleagues.
