Position Summary
The Italian Apron is seeking a passionate and skilled Artisanal Pasta Maker to craft high-quality, large-batch fresh pasta using traditional Italian methods. This role is integral to delivering the authentic culinary experience that defines our brand. The ideal candidate will have experience in artisanal baking or pasta production, a deep appreciation for Italian cuisine, and an artisan’s attention to detail.
Key Responsibilities
- Prepare fresh pasta daily including, but not limited to: campanelle, fettuccine, pappardelle, ravioli, agnolotti, and gnocchi
- Operate and maintain pasta-making equipment (e.g., extruders, sheeters, cutters)
- Mix and knead dough to achieve ideal texture and consistency
- Hand-shape and fill pasta with precision, using high-quality ingredients
- Assist in testing and developing new seasonal pasta offerings and shapes
- Maintain a clean, organized, and sanitary workspace in compliance with food safety standards
- Monitor ingredient inventory and communicate supply needs to management
- Work collaboratively with the kitchen and prep teams to fulfill daily production and catering orders
Job Requirements

Qualifications:
- Proven experience in fresh pasta making, either in a professional kitchen or artisanal production environment
- Knowledge of traditional Italian pasta types and regional styles
- Strong knife skills and manual dexterity
- Ability to follow and scale recipes with consistency
- Passion for Italian food, tradition, and craftsmanship
- Ability to stand for extended periods and lift up to 50 lbs
- ServSafe certification (or willingness to obtain) is a plus
Minimum Requirements:
- Skills: Strong knowledge of fermentation, hydration ratios, laminated dough, and traditional Italian pasta making techniques.
- Physical Ability: Must be able to lift 50 lbs., stand for extended periods, and work in a high-temperature environment.
- Availability: Flexible schedule, including early mornings, weekends, and holidays as required.
- Certifications (Preferred but Not Required): Culinary or baking certification from an accredited institution.
- Passion & Creativity: A deep love for artisanal baking or pasta making, attention to detail, and a willingness to innovate while honoring tradition.
Essential Job Duties and Responsibilities:
- Able and willing to be cross trained on other aspects of the operations
- Keep track of ingredient quantities to ensure there is always enough to meet weekly demand
- Flexible to work beyond a time frame to help meet high demand (when applicable)
- Support customer service and retail operations to ensure a positive and efficient guest experience as required
